- Kaiser Permanente Washington Research Lab used Roundup internally. In discussion with the author, it was heavily used by a small group. The manager of the group used Roundup at meeting to log status updates. They have a one page poster including some challenges with outlook. See:

Unusual Uses
https://www.polyomino.org.uk/mathematics/olympiad-software/intro/ uses Roundup as an online registration system for managing the database of a math olympics.

Roundup Tracker Instances
Since Roundup is usable out of the box, many sites only make small changes to the supplied templates. The Roundup project doesn't collect any stats on how many deployments there are, but Google can be used to find a number of running instances.
